Heart-Healthy Middle Eastern Chicken Curry

A delicious and heart-healthy chicken curry inspired by Middle Eastern flavors, designed to support a diet aimed at lowering high cholesterol.

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into cubes
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
Add chicken cubes to the skillet, cook until browned on all sides.
Stir in cumin, coriander, turmeric, cinnamon, and cayenne pepper, cook for another minute.
Add diced tomatoes, chickpeas, and chicken broth. Bring to a simmer and cook for 20 minutes, or until chicken is cooked through.
Season with salt and pepper to taste. Serve hot, garnished with chopped cilantro.
