Beef Curry

A delicious and heart-healthy beef curry recipe inspired by Indian cuisine, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 lb lean beef, cut into cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 red bell pepper, sliced
- 1 cup diced tomatoes
- 1 cup beef broth
- 1 can chickpeas, drained and rinsed
- 2 tbsp curry powder
- 1 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp coriander
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
In a large pot, heat olive oil over medium heat.
Add the onion, garlic, and ginger. Sauté until fragrant.
Add the beef cubes and brown on all sides.
Stir in the curry powder, turmeric, cumin, and coriander.
Add the bell pepper, tomatoes, beef broth, and chickpeas. Season with salt and pepper.
Cover and simmer for 20-25 minutes, until beef is tender.
Serve hot with brown rice or whole wheat naan.
