Heart-Healthy Vegan Asian Noodle Soup

A delicious and nutritious vegan noodle soup inspired by Asian flavors, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 8 oz whole wheat noodles
- 4 cups low-sodium vegetable broth
- 1 can (14 oz) of chickpeas, drained and rinsed
- 1 cup sliced shiitake mushrooms
- 1 cup chopped bok choy
- 1/2 cup sliced green onions
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
Instructions
In a large pot, bring vegetable broth to a boil.
Add noodles and cook according to package instructions.
Add chickpeas, mushrooms, bok choy, green onions, garlic, ginger, soy sauce, sesame oil, red pepper flakes, salt, and pepper to the pot.
Simmer for 10-15 minutes, or until vegetables are tender.
Taste and adjust seasoning as needed.
