Mediterranean-Inspired Vegetable Soup

A delicious and heart-healthy vegetable soup inspired by Mediterranean flavors, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 4 cups low-sodium vegetable broth
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
In a large pot, heat olive oil over medium heat.
Add the onion and garlic, sauté until fragrant.
Add carrots, celery, bell pepper, zucchini, and cherry tomatoes. Cook for 5 minutes.
Pour in vegetable broth and bring to a simmer.
Stir in chickpeas, oregano, basil, paprika, salt, and pepper. Simmer for 20 minutes.
Taste and adjust seasoning if needed.
Serve hot, garnished with fresh parsley.
