Grilled Lemon Herb Chicken

A delicious and heart-healthy grilled chicken recipe packed with fiber, plant-based proteins, and healthy fats.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
In a small bowl, whisk together olive oil, garlic, lemon juice, lemon zest, thyme, rosemary, salt, and pepper.
Place chicken breasts in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
Preheat grill to medium-high heat. Remove chicken from marinade and discard the excess liquid.
Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C).
Remove chicken from grill and let it rest for 5 minutes before serving.
Serve grilled lemon herb chicken with a side of steamed vegetables or a green salad.
