Asian-Inspired Shrimp Stir Fry

A delicious and heart-healthy shrimp stir fry recipe with Asian flavors, designed to support a diet aimed at lowering high cholesterol.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1/2 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Sesame seeds and green onions for garnish

Instructions

In a small bowl, whisk together soy sauce, rice vinegar, honey, cornstarch, and water. Set aside.
Heat olive oil in a wok or large skillet over medium-high heat. Add garlic and ginger, and stir fry for 1 minute.
Add shrimp to the wok and cook until pink and opaque, about 3-4 minutes. Remove from wok and set aside.
Add bell peppers, broccoli, and snap peas to the wok. Stir fry for 2-3 minutes until vegetables are tender-crisp.
Return shrimp to the wok and pour the soy sauce mixture over the ingredients. Stir well to coat everything evenly. Cook for another 2 minutes.
Season with salt and pepper to taste. Remove from heat.
Garnish with sesame seeds and sliced green onions before serving.
