Mediterranean Pasta Salad

A delicious and heart-healthy pasta salad inspired by Italian flavors, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 8 oz whole wheat pasta
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 English cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
Cook the pasta according to package instructions. Drain and rinse with cold water.
In a large bowl, combine the cooked pasta, chickpeas, cherry tomatoes, cucumber, olives, red onion, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
Pour the dressing over the pasta salad and toss to combine.
Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
Serve chilled and enjoy!
