Mediterranean Quinoa Salad

A delicious and heart-healthy Mediterranean-inspired quinoa salad rich in soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

Rinse the quinoa under running water to remove any bitterness.
In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let it cool.
In a large bowl, combine cooked quinoa, cucumber, bell pepper, red onion, cherry tomatoes, Kalamata olives, parsley, and mint.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
Pour the dressing over the salad ingredients and toss to combine.
Serve the Mediterranean quinoa salad chilled or at room temperature. Enjoy!
