Mediterranean Baked Salmon

A heart-healthy baked salmon recipe inspired by Mediterranean flavors, rich in omega-3 and designed to support a diet aimed at lowering high cholesterol.

Ingredients

  • 4 salmon fillets
  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp fresh parsley, chopped

Instructions

Preheat the oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper.
In a small bowl, mix together the minced garlic, oregano, basil, paprika, salt, pepper, and olive oil.
Brush the garlic herb mixture over the salmon fillets.
Top the salmon with lemon slices, olives, and cherry tomatoes.
Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through.
Garnish with chopped fresh parsley before serving.
