Ingredients

  • 2 slices whole grain bread
  • 3 oz lean turkey breast, sliced
  • 1/4 avocado, mashed
  • 1/4 cup spinach leaves
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 tsp mustard
  • 1 tsp balsamic vinegar
  • Salt and pepper to taste

Instructions

Toast the whole grain bread slices until golden brown.
Spread the mashed avocado on one slice of bread.
Layer the turkey slices, spinach leaves, cucumber, cherry tomatoes, and red onion on top of the avocado.
