Asian-Inspired Quinoa Salad

A delicious and heart-healthy Asian-inspired quinoa salad packed with soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 cup edamame, shelled
  • 1 carrot, julienned
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup almonds, chopped
  • 1 tablespoon sesame seeds
  • For the dressing:
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced

Instructions

In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed. Fluff with a fork and let cool.
In a large mixing bowl, combine cooked quinoa, red bell pepper, edamame, carrot, cilantro, green onions, almonds, and sesame seeds.
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, maple syrup, ginger, and garlic to make the dressing.
Pour the dressing over the quinoa salad and toss to combine.
Serve the Asian-inspired quinoa salad chilled or at room temperature. Enjoy!
