Mediterranean Shrimp Stir Fry

A flavorful and heart-healthy shrimp stir fry inspired by Mediterranean cuisine, perfect for supporting a diet aimed at lowering high cholesterol.
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
In a large skillet, heat olive oil over medium-high heat.
Add onion and garlic, and sauté until fragrant.
Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
Add bell peppers and zucchini to the skillet, and cook until slightly softened.
Return shrimp to the skillet, and add cherry tomatoes and olives. Cook for another 2-3 minutes.
Drizzle lemon juice over the stir fry, and sprinkle with parsley. Season with salt and pepper to taste.
Serve the Mediterranean shrimp stir fry hot, with a side of whole grain rice or quinoa, if desired.
