Mediterranean-Inspired Vegetarian Stir Fry

Ingredients
- 1 tablespoon olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1 can chickpeas, drained and rinsed
- 1/2 cup Kalamata olives, pitted
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
- Lemon wedges for serving
Instructions
Heat olive oil in a large skillet or wok over medium heat.
Add onion and garlic, and sauté until fragrant, about 2 minutes.
Add bell peppers, zucchini, cherry tomatoes, chickpeas, and olives to the skillet.
Sprinkle oregano, thyme, salt, and pepper over the vegetables, and stir well to combine.
Cook for 8-10 minutes, stirring occasionally, until the vegetables are tender.
Garnish with fresh parsley and serve with lemon wedges.
