Middle Eastern Inspired Grilled Chicken

A delicious and heart-healthy grilled chicken recipe inspired by Middle Eastern flavors, rich in omega-3 and plant-based proteins.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/4 tsp cinnamon
- Salt and pepper to taste
- Juice of 1 lemon
- 2 tbsp chopped fresh parsley
Instructions
In a bowl, mix olive oil, garlic, cumin, coriander, paprika, cinnamon, salt, pepper, and lemon juice to create a marinade.
Add chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
Preheat grill to medium-high heat. Remove chicken from marinade and discard excess marinade.
Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (75°C).
Remove chicken from grill and let it rest for a few minutes before slicing.
Sprinkle chopped parsley over the grilled chicken before serving.
Serve with a side of quinoa tabbouleh salad or grilled vegetables for a complete heart-healthy meal.
