Baked Salmon with Lemon Herb Quinoa

A heart-healthy baked salmon dish with lemon herb quinoa that supports a diet aimed at lowering high cholesterol.
Ingredients
- 4 salmon fillets
- 1 cup quinoa
- 2 cups vegetable broth
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Season the salmon fillets with salt, pepper, and half of the lemon zest. Place them on the baking sheet and bake for 15-20 minutes, or until cooked through.
In a saucepan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Add quinoa, vegetable broth, thyme, parsley, remaining lemon zest, and lemon juice. Bring to a boil, then reduce heat and simmer for 15 minutes, or until quinoa is cooked.
Fluff the quinoa with a fork and season with salt and pepper to taste.
Serve the baked salmon fillets over a bed of lemon herb quinoa. Enjoy!
