Mediterranean Zucchini Noodles

A delicious and heart-healthy dish made with zucchini noodles and Mediterranean-inspired ingredients to support a diet aimed at lowering high cholesterol.
Ingredients
- 2 medium zucchinis
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup Kalamata olives, sliced
- 1/4 cup pine nuts
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
Using a spiralizer, spiralize the zucchinis into noodles.
In a large skillet, heat olive oil over medium heat.
Add minced garlic and cook until fragrant, about 1 minute.
Add sun-dried tomatoes, Kalamata olives, pine nuts, and red pepper flakes. Cook for another 2 minutes.
Add zucchini noodles to the skillet and toss to combine with the other ingredients. Cook for 3-4 minutes until the noodles are tender.
Season with salt and pepper to taste.
Serve the zucchini noodles in a bowl, garnish with fresh basil leaves, and enjoy!
