Mediterranean-Inspired Veggie Burger

A delicious and heart-healthy veggie burger inspired by Mediterranean flavors, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup chopped sun-dried tomatoes
- 1/4 cup chopped kalamata olives
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 1/4 cup whole wheat breadcrumbs
- 1/4 cup almond flour
- 1/4 cup tahini
- 4 whole wheat burger buns
- Lettuce, tomato slices, and sliced cucumber for serving
Instructions
In a food processor, combine chickpeas, quinoa, sun-dried tomatoes, olives, parsley, garlic, oregano, cumin, salt, and pepper. Pulse until well combined but still slightly chunky.
Transfer the mixture to a mixing bowl and stir in breadcrumbs, almond flour, and tahini. Mix until everything is well combined and holds together.
Divide the mixture into 4 equal portions and shape into patties. Place them on a baking sheet lined with parchment paper and refrigerate for 15 minutes to firm up.
Preheat a grill or grill pan over medium heat. Cook the veggie burgers for about 5-7 minutes per side, or until they are heated through and have grill marks.
Toast the burger buns on the grill for a minute or two until lightly browned.
Assemble the burgers by placing lettuce, tomato slices, and cucumber on the bottom bun, then top with a veggie burger patty and the top bun. Serve hot and enjoy!
