Mediterranean Pasta Salad

A delicious and heart-healthy Mediterranean-inspired pasta salad, perfect for lowering high cholesterol. Packed with soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 8 oz gluten-free pasta
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
In a large bowl, combine the cooked pasta, chickpeas, tomatoes, cucumber, red onion, olives, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
Pour the dressing over the pasta salad and toss to combine.
Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
Serve chilled and enjoy!
