Hearty Bean Chili

A delicious and heart-healthy bean chili packed with fiber and plant-based proteins, perfect for lowering high cholesterol.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 2 cups vegetable broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro, for garnish
Instructions
In a large pot, heat olive oil over medium heat.
Add onion, garlic, bell pepper, and zucchini. Cook until vegetables are softened, about 5 minutes.
Stir in black beans, kidney beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and pepper.
Bring the chili to a simmer, then reduce heat and let it cook for 20-25 minutes, stirring occasionally.
Taste and adjust seasoning if needed.
Serve hot, garnished with fresh cilantro. Enjoy!
