Asian-Inspired Chicken Curry

A delicious and heart-healthy chicken curry recipe with Asian flavors, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 red bell pepper, sliced
- 1 can (14 oz) coconut milk
- 1 cup low-sodium chicken broth
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion, minced garlic, and grated ginger. Saute until fragrant.
Add chicken pieces and cook until browned on all sides.
Stir in curry powder, turmeric, cumin, and coriander. Cook for another minute.
Pour in coconut milk and chicken broth. Bring to a simmer and cook for 15-20 minutes until chicken is cooked through.
Add sliced red bell pepper and cook for another 5 minutes.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
