Mediterranean Quinoa Salad

A delicious and heart-healthy Mediterranean-inspired quinoa salad packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until the water is absorbed and quinoa is cooked. Fluff with a fork and let it cool.
In a large bowl, combine the cooked quinoa, chickpeas, cucumber, bell pepper, red onion, olives, parsley, and mint.
In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper to make the dressing.
Pour the dressing over the quinoa salad and toss to combine. Adjust seasoning to taste.
Serve the Mediterranean quinoa salad chilled or at room temperature. Enjoy!
