Ingredients

  • 2 slices whole grain bread
  • 4 oz sliced turkey breast
  • 2 tbsp hummus
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup mixed greens
  • 1 tbsp feta cheese, crumbled
  • 1 tbsp kalamata olives, sliced
  • 1/2 lemon, juiced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

Spread hummus on one slice of bread.
Layer turkey, cucumber, cherry tomatoes, red onion, mixed greens, feta cheese, and kalamata olives on top of the hummus.
