Mediterranean Stuffed Peppers

Delicious and heart-healthy Mediterranean inspired stuffed peppers filled with nutritious ingredients.
Ingredients
- 4 large bell peppers, halved and deseeded
- 1 cup cooked quinoa
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped Kalamata olives
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp cumin
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, mix together quinoa, chickpeas, tomatoes, red onion, olives, parsley, garlic, oregano, cumin, olive oil, salt, and pepper.
Fill each pepper half with the quinoa mixture and place them on a baking dish.
Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
Serve the stuffed peppers hot, garnished with additional parsley if desired.
