Asian-Inspired Zucchini Noodles

A delicious and heart-healthy recipe for zucchini noodles inspired by Asian flavors, perfect for supporting a diet aimed at lowering high cholesterol.
Ingredients
- 2 medium zucchinis
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon grated ginger
- 1/2 cup shelled edamame
- 1/4 cup sliced green onions
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
Using a spiralizer, create zucchini noodles from the zucchinis.
In a large pan, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
Add zucchini noodles to the pan, along with soy sauce and rice vinegar. Cook for 3-4 minutes, stirring occasionally.
Stir in edamame and green onions, cook for an additional 2-3 minutes until zucchini noodles are tender.
Season with salt and pepper to taste. Serve hot, garnished with sesame seeds.
