Mediterranean-Inspired Lentil Stew

A delicious and heart-healthy Mediterranean-inspired lentil stew that supports a diet aimed at lowering high cholesterol.
Ingredients
- 1 cup dried brown lentils, rinsed and drained
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
In a large pot, heat olive oil over medium heat.
Add onions, carrots, celery, and garlic. Saute until vegetables are tender, about 5 minutes.
Stir in cumin, paprika, and oregano. Cook for another minute.
Add lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-40 minutes or until lentils are tender.
Season with salt and pepper to taste.
Serve hot, garnished with fresh parsley.
