Hearty Mediterranean Pasta Salad

A delicious and heart-healthy pasta salad inspired by Mediterranean flavors, perfect for lowering high cholesterol levels.
Ingredients
- 8 oz whole wheat pasta
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 English cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
Cook the pasta according to package instructions. Drain and rinse with cold water.
In a large bowl, combine the cooked pasta, chickpeas, cherry tomatoes, cucumber, olives, red onion, and parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, garlic, salt, and pepper.
Pour the dressing over the pasta salad and toss to combine.
Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
