Fiber-Rich Bean Chili

A delicious and heart-healthy bean chili recipe packed with soluble fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

In a large pot, heat olive oil over medium heat.
Add onion and garlic, sauté until fragrant.
Add bell pepper and zucchini, cook until slightly softened.
Stir in black beans, kidney beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and pepper.
Bring the chili to a boil, then reduce heat and let it simmer for 30-40 minutes, stirring occasionally.
Taste and adjust seasoning if needed.
Serve hot, garnished with fresh cilantro.
