Mediterranean-Inspired Chicken Curry

A delicious and heart-healthy chicken curry inspired by Mediterranean flavors, rich in omega-3 and plant-based proteins.
Ingredients
- 1 lb skinless, boneless chicken breast, cut into cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 cup low-sodium chicken broth
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
Add chicken cubes to the skillet, cook until browned on all sides.
Stir in diced tomatoes, chickpeas, chicken broth, turmeric, cumin, paprika, cinnamon, salt, and pepper. Bring to a simmer.
Cover and cook for 30 minutes, or until chicken is cooked through and flavors have melded together.
Serve hot, garnished with fresh parsley. Enjoy!
