Mediterranean-Inspired Shrimp Stir Fry

A delicious and heart-healthy shrimp stir fry inspired by Mediterranean flavors, perfect for supporting a diet aimed at lowering high cholesterol.
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 onion, sliced
- 2 bell peppers, sliced
- 1 zucchini, sliced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions
In a large skillet, heat olive oil over medium heat.
Add onion, bell peppers, zucchini, and garlic to the skillet. Cook until vegetables are tender, about 5 minutes.
Push vegetables to the side of the skillet and add shrimp. Cook until shrimp are pink and opaque, about 3 minutes per side.
Stir in dried oregano, dried basil, cherry tomatoes, salt, and pepper. Cook for another 2 minutes.
