Grilled Lemon Herb Chicken

A heart-healthy grilled chicken recipe packed with fiber, plant-based proteins, and healthy fats, perfect for lowering high cholesterol levels.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
In a small bowl, combine olive oil, garlic, lemon juice, lemon zest, parsley, thyme, salt, and pepper to make the marinade.
Place chicken breasts in a shallow dish and pour the marinade over them, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes to marinate.
Preheat grill to medium-high heat. Remove chicken from marinade and discard excess marinade. Grill chicken for 6-7 minutes per side, or until cooked through and juices run clear.
Remove chicken from the grill and let it rest for a few minutes before serving. Slice and enjoy!
