Spiced Lentil Stew

A flavorful and heart-healthy lentil stew inspired by Indian cuisine, perfect for lowering cholesterol levels.

Ingredients

  • 1 cup dried lentils, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/4 tsp cayenne pepper
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup spinach, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

In a large pot, heat olive oil over medium heat. Add cumin seeds and let them sizzle for a minute.
Add chopped onion, garlic, and ginger. Sauté until onions are translucent.
Stir in turmeric, coriander powder, garam masala, and cayenne pepper. Cook for another minute.
Add lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.
Add chopped spinach and cook for an additional 5 minutes until spinach is wilted.
Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
