Mediterranean-Inspired Oatmeal Bowl

A heart-healthy oatmeal bowl inspired by Mediterranean flavors, perfect for lowering high cholesterol.
Ingredients
- 1/2 cup rolled oats
- 1 cup unsweetened almond milk
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground turmeric
- 1 tablespoon chia seeds
- 1 tablespoon flaxseeds
- 1/4 cup chopped walnuts
- 1/2 cup mixed berries (such as blueberries and raspberries)
- 1 tablespoon honey or maple syrup (optional)
- 1 tablespoon unsweetened coconut flakes
Instructions
In a small saucepan, combine the rolled oats, almond milk, cinnamon, and turmeric. Bring to a simmer over medium heat.
Cook the oatmeal for 5-7 minutes, stirring occasionally, until thickened to your desired consistency.
Remove the saucepan from heat and stir in the chia seeds and flaxseeds. Let it sit for 2 minutes to thicken.
Transfer the oatmeal to a bowl and top with chopped walnuts, mixed berries, honey or maple syrup (if using), and coconut flakes.
