Mediterranean-Inspired Pasta Salad

A delicious and heart-healthy Mediterranean-inspired pasta salad that supports a diet aimed at lowering high cholesterol. Packed with fiber, plant-based proteins, and healthy fats.
Ingredients
- 8 oz whole grain pasta
- 1 can chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
In a large bowl, combine the cooked pasta, chickpeas, cherry tomatoes, cucumber, red onion, olives, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to make the dressing.
Pour the dressing over the pasta salad and toss to coat evenly.
Refrigerate for at least 1 hour to allow the flavors to marinate before serving.
