Italian-Inspired Bean Chili

A delicious and heart-healthy bean chili inspired by Italian flavors, packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 carrot, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 2 cups vegetable broth
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
In a large pot, heat olive oil over medium heat.
Add onion and garlic, sauté until translucent.
Add bell pepper, zucchini, and carrot, cook for 5 minutes.
Stir in kidney beans, cannellini beans, diced tomatoes, vegetable broth, tomato paste, oregano, basil, red pepper flakes, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Taste and adjust seasoning if needed.
Serve hot, garnished with fresh basil leaves.
