Asian-Inspired Quinoa Salad

A delicious and heart-healthy quinoa salad inspired by Asian flavors, perfect for supporting a diet aimed at lowering high cholesterol.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 carrot, shredded
- 1/4 cup edamame beans
- 1/4 cup sliced almonds
- 2 green onions, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is cooked. Fluff with a fork and let it cool.
In a large bowl, combine the cooked quinoa, red bell pepper, cucumber, carrot, edamame beans, almonds, green onions, and cilantro.
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, ginger, garlic, salt, and pepper. Pour the dressing over the quinoa salad and toss to combine.
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
