Fiber-Rich Minestrone Soup

A delicious and heart-healthy Minestrone soup packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 6 cups vegetable broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 cup whole wheat pasta
- 2 cups spinach, chopped
- 2 tbsp ground flaxseeds
Instructions
In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
Add carrots, celery, zucchini, and green beans. Cook for 5 minutes, stirring occasionally.
Stir in kidney beans, diced tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
Add whole wheat pasta and continue to simmer for another 10 minutes, or until pasta is cooked.
Stir in spinach and ground flaxseeds. Cook for an additional 2 minutes.
Adjust seasoning with salt and pepper if needed. Serve hot and enjoy!
