Mediterranean-Inspired Vegan Shrimp Stir Fry

A delicious and heart-healthy vegan shrimp stir fry inspired by Mediterranean flavors, perfect for a diet aimed at lowering high cholesterol.
Ingredients
- 1 lb vegan shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
In a large skillet, heat olive oil over medium-high heat.
Add vegan shrimp to the skillet and cook for 3-4 minutes, until slightly browned.
Add garlic, bell peppers, zucchini, cherry tomatoes, and olives to the skillet. Cook for another 5-7 minutes, stirring occasionally.
Season with salt, pepper, and lemon juice. Stir in fresh basil and parsley.
