Fiber-Rich Turkey Sandwich

A delicious and heart-healthy turkey sandwich packed with fiber-rich ingredients to support a diet aimed at lowering high cholesterol.

Ingredients

  • 2 slices whole grain bread
  • 3 oz roasted turkey breast, sliced
  • 1/4 avocado, mashed
  • 1/2 cup spinach leaves
  • 1/4 cup sliced cucumber
  • 1/4 cup shredded carrots
  • 1 tablespoon hummus
  • 1 teaspoon Dijon mustard
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

Toast the whole grain bread slices until golden brown.
Spread mashed avocado on one slice of bread.
Layer spinach leaves, sliced turkey breast, cucumber, and shredded carrots on top of the avocado.
Spread hummus on the other slice of bread and place it on top of the sandwich.
Mix Dijon mustard with olive oil, salt, and pepper, and drizzle over the sandwich.
Serve the fiber-rich turkey sandwich with a side of fresh fruit or a small salad.
