Indian-inspired High-Protein Ladyfinger

A delicious and heart-healthy Indian-inspired ladyfinger recipe packed with plant-based proteins and fiber, perfect for lowering high cholesterol levels.
Ingredients
- 1 cup ladyfinger (okra), sliced
- 1 onion, chopped
- 1 tomato, diced
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tbsp olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
Heat olive oil in a pan over medium heat.
Add cumin seeds and sauté until they start to splutter.
Add chopped onions and green chili, sauté until onions turn translucent.
Add turmeric, coriander powder, and salt. Mix well.
Add diced tomatoes and cook until they soften.
Add sliced ladyfinger and garam masala. Cook covered for 10 minutes.
Stir occasionally to prevent sticking.
Garnish with fresh cilantro and serve hot with roti or brown rice.
