Fiber-Rich Chocolate Chip Cookies

Delicious chocolate chip cookies that are heart-healthy, low in cholesterol, and rich in fiber.
Ingredients
- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup pureed avocado
- 1/4 cup pure maple syrup
- 1/4 cup dark chocolate chips
- 1/4 cup chopped walnuts
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a large bowl, mix together almond flour, coconut oil, avocado, maple syrup, vanilla extract, baking soda, and salt until well combined.
Fold in the dark chocolate chips and chopped walnuts.
Using a cookie scoop, portion out the dough onto the prepared baking sheet.
Flatten each cookie slightly with the back of a spoon.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
