Mediterranean-Inspired EQiblyKah

A heart-healthy Mediterranean-inspired dish designed to support a diet aimed at lowering high cholesterol, rich in soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste

Instructions

In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and water is absorbed.
In a large mixing bowl, combine cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, olives, parsley, and mint.
In a small bowl, whisk together olive oil, lemon juice, cumin, salt, and pepper.
Pour the dressing over the quinoa salad and toss to combine.
Serve the EQiblyKah salad chilled or at room temperature. Enjoy!
