Middle Eastern Inspired High-Fiber Chicken

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

In a large skillet, heat olive oil over medium heat.
Add diced onion and garlic, sauté until softened.
Add chicken thighs to the skillet and brown on both sides.
Stir in cumin, coriander, paprika, cinnamon, turmeric, and cayenne pepper.
Add chickpeas, diced tomatoes, and chicken broth. Season with salt and pepper.
Cover and simmer for 30 minutes or until chicken is cooked through.
Garnish with fresh parsley before serving.
