Nutty Energy Balls

Delicious and nutritious nut balls made with heart-healthy ingredients to support a diet aimed at lowering high cholesterol.

Ingredients

  • 1 cup mixed nuts (almonds, walnuts, cashews)
  • 1/4 cup pumpkin seeds
  • 1/4 cup watermelon seeds
  • 2 tbsp ghee
  • 1/2 cup dates, pitted

Instructions

In a pan, dry roast the mixed nuts, pumpkin seeds, and watermelon seeds until fragrant.
In the same pan, heat ghee and fry the dates until they soften.
Combine the roasted nuts and seeds with the fried dates in a food processor and blend until a sticky dough forms.
Roll the mixture into small balls and refrigerate for at least 30 minutes to set.
