Fiber-Rich Chocolate Chip Cookies

Ingredients
- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup dark chocolate chips
- 1/4 cup chopped walnuts
- 1 tsp vanilla extract
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, baking soda, salt, and vanilla extract. Mix well to form a dough.
Fold in the dark chocolate chips and chopped walnuts into the dough.
Scoop out tablespoon-sized portions of the dough and place them on the prepared baking sheet.
Flatten each cookie slightly with the back of a spoon.
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
