Mango Oat Cookies

Delicious and heart-healthy mango oat cookies packed with fiber and healthy fats. Perfect for a cholesterol-lowering diet.
Ingredients
- 1 ripe mango, peeled and diced
- 1 cup rolled oats
- 1/4 cup almond flour
- 2 tbsp chia seeds
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a mixing bowl, mash the diced mango with a fork until smooth.
Add the rolled oats, almond flour, chia seeds, maple syrup, vanilla extract, cinnamon, and salt to the bowl with the mashed mango. Mix well to combine.
Scoop out spoonfuls of the cookie dough and place them on the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
Bake in the preheated oven for 15 minutes, or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
