Soluble Fiber-Rich Mango Cookies

Delicious mango cookies packed with heart-healthy ingredients rich in soluble fiber, plant-based proteins, and healthy fats. Perfect for a diet aimed at lowering high cholesterol.
Ingredients
- 1 ripe mango, peeled and diced
- 1 cup rolled oats
- 1/4 cup almond flour
- 2 tbsp chia seeds
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup chopped walnuts (optional)
Instructions
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a food processor, blend the diced mango until smooth.
In a large mixing bowl, combine the mango puree, rolled oats, almond flour, chia seeds, maple syrup, cinnamon, and salt. Mix well to form a sticky dough.
If using walnuts, fold them into the dough.
Scoop tablespoon-sized portions of the dough and place them on the prepared baking sheet. Flatten each cookie slightly with a fork.
Bake in the preheated oven for 12 minutes, or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
