Mango Bar Cookies

Delicious and heart-healthy mango bar cookies that are rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 ripe mango, diced
Instructions
Preheat the oven to 350°F (180°C) and line a baking dish with parchment paper.
In a mixing bowl, combine the rolled oats, almond flour, coconut oil, maple syrup, vanilla extract, cinnamon, and salt. Mix well.
Press half of the oat mixture into the bottom of the lined baking dish to form a crust.
Spread the diced mango evenly over the crust.
Crumble the remaining oat mixture over the mango layer.
Bake in the preheated oven for 25 minutes, or until the top is golden brown.
Allow the mango bar cookies to cool before slicing into squares and serving.
