Fiber-Rich Chocolate Chip Cookies

Delicious and heart-healthy chocolate chip cookies made with fiber-rich ingredients to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup ground flaxseeds
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/4 cup dark chocolate chips
Instructions
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a large bowl, mix together almond flour, coconut flour, ground flaxseeds, baking soda, and salt.
Add melted coconut oil, maple syrup, and vanilla extract to the dry ingredients. Mix until well combined.
Fold in dark chocolate chips.
Scoop out tablespoon-sized portions of the dough and place them on the prepared baking sheet.
Flatten each cookie slightly with the back of a spoon.
Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
