Indian Spiced Baked Fish with Lentil Salad

A delicious and heart-healthy Indian-inspired fish recipe with a side of lentil salad, perfect for lowering high cholesterol.
Ingredients
- 4 white fish fillets (such as cod or halibut)
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1/2 tsp chili powder
- Salt and pepper to taste
- 1 cup dried lentils
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lemon
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
In a small bowl, mix together olive oil, cumin, coriander, turmeric, chili powder, salt, and pepper.
Place the fish fillets on a baking sheet lined with parchment paper. Brush the spice mixture over the fillets.
Bake the fish in the preheated oven for 15-20 minutes, or until cooked through.
While the fish is baking, rinse the lentils and cook them in a pot with 2 cups of water until tender.
In a large bowl, combine the cooked lentils, cucumber, red bell pepper, cilantro, lemon juice, olive oil, salt, and pepper. Mix well.
Serve the baked fish fillets with a generous portion of the lentil salad on the side. Enjoy!
