French-Inspired Enirko Vbzvdcl

A delicious and heart-healthy recipe designed to support a diet aimed at lowering high cholesterol, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp turmeric
- Salt and pepper to taste
- 2 tbsp olive oil
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions
In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.
In a large skillet, heat olive oil over medium heat. Add the red onion and cook until translucent, about 5 minutes.
Add the garlic, red bell pepper, chickpeas, paprika, cumin, turmeric, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the chickpea mixture. Stir well to combine.
Drizzle with lemon juice and garnish with fresh parsley before serving.
